Luke provides the full, vivid narrative with dialogue, the walk, the Scripture exposition, and the breaking of bread as the moment of recognition. Mark's longer ending compresses the entire episode into two verses, saying Jesus appeared "in another form" to two disciples walking in the country. The Emmaus narrative is one of Luke's greatest literary achievements and his most detailed resurrection appearance.
